Reluctant Housewife: Ultimate Avocado Toast

After doing a five mile hike the other day with friends all I could think about was how much I needed some good avocado toast as my reward for literally scaling a mountain. I tend to be a creature of habit and so we all went to one of my favorite restaurants in Los Feliz, a small hipster town near Hollywood for brunch. While I didn't remember there being a avocado toast on their menu it was as if the food gods had provided and to my surprise there it was, avocado toast. I ordered it and what came out was no ordinary toast. This was bursting with usual flavor and depth. I inspected, I assessed and I got to the bottom on it. When a manager came by the table to say a friendly hello asking us how our food was I drunk on toast, told him that this was the best avocado toast I'd ever had. Happy but taken aback he slowly said thank you and side stepped away.
But, it was the best and now I've made it for you to try!

Ultimate Avocado Toast
Soft thick bread
1 ripe avocado
chopped grapefruit
ricotta cheese
honey
1 egg
salt and pepper to taste
seed (sunflower, sesame, you choose) to garnish
First, although it's called avocado toast please don't toast your bread. You can slightly toast it, but you're going to need the flexibility to work with you here.
Next smear on the ricotta cheese. Drizzle honey on that. Then add a half of an avocado. Smear that on or spread however you like.
Next, add you small cubed grapefruit. Then add a cooked egg. Scrambled, sunny side up, egg whites, whatever. You do you.
Add salt and pepper to taste and seeds for a garnish and there you have it. The best avocado toast ever!
