Reluctant Housewife: Strawberry Pie
Years ago I attempted my first strawberry pie in an episode and I guess I got to wrapped up in it I kind of forgot to tell you the instructions. So, this time I really tell you how to make a strawberry pie!
My mom and I in the dead of summer heat in Arizona make this together and naturally with a little heat stroke and some wine it somehow turns out just right.
Watch the Reluctant Housewife episode here and grab this super easy recipe below!
1 pound fresh strawberries
1 cup granulated sugar
1 tablespoon cornstarch
3/4 cup water
Quarter half of your strawberries and leave the other half whole.
In a medium sauce pan bring place your quartered strawberries with cup of sugar and bring to a medium-high heat. Stir around until they come to a boil.
Add your cornstarch to your water and stir until it looks like milk.
Once your strawberries are at a boil add your cornstarch mixture. Bring to a medium heat and stir until it become think. It could go fast, but think anywhere from two minutes to ten minutes. Once it thickens take it off the stove and let cool for about five minutes.
Pour your whole strawberries into your premade crust. Add strawberries and filling from your sauce pan and pour onto pie. Add a little zest of a lime to really kick up the flavor of the berries. It's an amazing trick I learned the first time around and a real crowd pleaser. Enjoy!
