Reluctant Housewife: Strawberry Cream Cheese Cookies
In honor of Breast Cancer Awareness month I thought I'd so something to support. Having had family who has survived from breast cancer I thought that sometimes it's nice to just do something little, like make some cookies to show you care. Sometimes just being there with a little cookie is enough.
These soft, fluffy cookies are like little pancakes or scones. The chunks of fresh strawberry poke out and make each bite even more delectable. They're a fun little cookie if I say so myself.

Strawberry Cream Cheese Cookies
8 ounces room temp cream cheese
4 ounces room temp butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 tsp vanilla extract
1 1/4 cup all-purpose flour, sifted
1/2 tsp baking powder
1 cup strawberries diced
Preheat your oven to 350 degrees. Line a sheet pan with parchment paper or tinfoil greased with butter.
In one mixing bowl mix together your egg and sugar until smooth. Add your vanilla and mix again.
In a separate bowl mix together your dry ingredients with a whisk.
Add you dry ingredients to your wet ingredients and beat to combine.
Then fold in your strawberries until blent.
Using spoons or an ice cream scooper place small balls of cookie on you sheet pan about 3 inches apart from each other. Press down your ball so it's a little flatter.
Bake for 14 minutes until golden brown on the edges. Place cookies on a cooling rack. Serve and enjoy!
Cookies can be kept in a cool, dry place or refrigerated in an air tight container.
