Reluctant Housewife: Spiked Eggnog Truffles, or Snowman Poop
It's the height of the holidays and you're stuck making a dessert last minute. You don't want to be that girl who goes and picks something up at the market with its sad market price tag on it tasting like it's probably been sitting there for days but you don't have the mental or physical energy to jump into a whole baking extravaganza.
So, pull out your blender kids it's time to make some no-bake truffles!
These truffles are so versatile. The base of them is a sugar cookie so any flavor or alcohol can be added to make them your own creation. Today I'm making eggnog tomorrow I could make birthday cake. The possibilities are endless. Choose your own adventure.

Spiked Eggnog Truffles (Snowman Poop)
15 baked sugar cookies
8 oz. cream cheese
1 tsp vanilla extract
pinch kosher salt
1/2 cup whiskey, brandy or rum (if you're going non-alcoholic use milk instead or actual eggnog!)
1/2 tsp cinnamon
1/2 tsp nutmeg
1 1/4 cup of white chocolate chips
2 tbsp coconut oil
2 tbsp granulated sugar
Throw your cookies into a mixer, food processor or blender and pulse until they become a grain.
Add your cream cheese, vanilla, salt, whiskey, cinnamon and nutmeg and keep pulsing until smooth.
Transfer your batter into another bowl and set aside.
Pour your chocolate chip and coconut oil into a separate bowl and melt in a microwave or in a double boiler.
Using a spoon make spoon size balls of batter and place they on a fork. Coat them in chocolate and place on a sheet pan with parchment paper.
Make cinnamon sugar mixer by adding sugar and cinnamon to taste. Sprinkle on truffles while the chocolate is still tacky.
Place in the fridge for about fifteen minutes to set. Serve and enjoy!
