Reluctant Housewife: Nectarine Ricotta Pizza
Okay, so I recently filmed the sizzle for Reluctant Housewife! Yay! It was a super fun experience and it'll help take Reluctant Housewife to the next level!
While I was filming it I did a segment where I made this pizza and naturally, as pizza does, it turned out amazingly! I had to share it with you!
Watch the Reluctant Housewife episode here and grab this super easy and quick recipe below!
Nectarine Ricotta Pizza
Pre-made pizza dough
2 ripe nectarines
1/2 red onion
salt and pepper for taste
Preheat you oven to the temperature you pizza dough calls for.
Using a large pan or pizza stone throw some flour down to help keep the pizza from sticking.
Letting your pizza dough rest for a half hour take it and start to stretch it out until it forms the shape you desire. Rectangle or round is standard. You can do this on your pan.
Add a drizzle of olive oil to your dough. Then using a spoon add large dollops of ricotta to your flat dough. Life making cookies space them about two to the three inches apart.
Add slices nectarine to your pizza. Then add rings on onion. Add salt and pepper to taste.
Bake for about 12-18 minutes. The bottom of the pizza should be hard when it's done. The top will have liquid from the fruit. Don't worry. It's cooked as long as you see that the dough is firm and onions and fruit look parched.
Take out of the oven and sprinkle arugula on top. Then tear small pieces of prosciutto and sprinkle on top of that. Add salt and pepper to taste.
