Reluctant Housewife: Keto Pancakes
So, everyones on the keto bandwagon and having some great results with it. I'm not on it per se but I'm not opposed to trying some recipes out! And, any way I can eat pancakes with a little less guilt is something I'll definitely get on a bandwagon for!
These little cakes are made with cream cheese! Now before you freak out like I did keto is all about the fat. So take a deep breath and it'll all be okay for all of my people who grew up with a NO FAT policy.
Who knew that cream cheese would help you lose weight. The jury might be out on that for me, but it's always worth a shot. And by the way, they're freaking delicious!

1/2 cup almond flour
4 oz. cream cheese
4 large eggs
1 tsp. lemon zest
butter for frying
In a medium bowl whisk together almond flour, cream cheese, eggs and lemon zest until smooth preferably with an electric mixer.
In a frying pan add a tbsp of butter and bring to a low to medium heat. Pour about three tbsp of batter in. Or, go as big as you want. The batter will spread so you choose how big you want your pancakes to be. Tiny bubbles will start to appear and the edges of the pancake will start to firm up after about a minute or two. Flip and cook for about 30 seconds.
Place pancakes on a plate. Serve with butter or any keto friendly topping! Chives or any savory flavoring or addition works great with these pancakes! Enjoy!
