Reluctant Housewife: Grilled Eggplant



It is definitely summer time and that means BBQ. But, if you're looking for a fun new side dish or you're vegetarian grilled eggplant is a great alternative! It's hearty and cooks up quick. Which is usually what I'm looking for when I'm starving after a long day by the pool. Feed me.

Grilled Eggplant

1 eggplant

1 clove of garlic

1 small bushel of parsley

Juice of 1 lemon

1 cup olive oil

salt and pepper to taste

red pepper flakes to taste

olive oil for drizzling

feta to taste


Cut the head off of your eggplant, then slice into 1 inch slices. Drizzle olive oil to slightly coat either side of your slices. Set aside.

Finely chop parsley leaves and add to a small bowl. Mince garlic and add to bowl. Add the juice of a lemon to your bowl. Add 1 cup of olive oil. Add salt and pepper and red pepper flakes to taste.


Grill your eggplant on either side on medium-high heat for an indoor grill for about ten minutes.


Add your parsley bowl in spoonfuls over your eggplant and serve over a bed of steamed kale or brown rice... Or, whatever really. Sprinkle feta on top to taste. Enjoy!
