Reluctant Housewife: Crispy Cauliflower Bites

I love snacking. And, I'm sure you do because the word 'snacks' has literally become slang suddenly and everyone's on it. But, if I'm gonna snack it better be worth it. Luckily I have the perfect snacking snack, crispy cauliflower bites! They're perfect for a party of any kind and go well with just about anything. Not to mention they're super easy to make and the only thing that takes time is the 25 minutes they're in the oven.

Crispy Cauliflower Bites
1 1/2 cups panko bread crumbs
1/2 cup finely grated parmesan
1/2 tsp oregano or Italian seasoning
kosher salt to taste
freshly ground black pepper to taste
cauliflower florets
3 eggs
marinara
Heat your oven to 400 degrees.
Crack your eggs into a small bowl and whisk.
Add your other ingredients except the cauliflower and marinara to a separate bowl.
Taking bite size florets coat them first in the egg making sure to drain additional egg before transferring to parmesan mixture.
Then take your floret and coat in the parmesan mixture.
Place florets on a sheet pan with tinfoil or parchment paper. Bake for 25 minutes or until golden and crispy. Serve with marinara on the side and enjoy!
