Reluctant Housewife: Avocado Lime Popsicles

I recently went to visit my best friend in her new home of Dallas and one of the things she told me we had to do was visit this popsicle shop in her neighborhood. At first the idea of popsicles sounded childish and sort of boring. Like, what on Earth could they possibly do to a popsicle to make it better than ice cream? Well, was I mistaken.


After sampling small pieces of popsicle favors like turtle sunday and cherry hibiscus I was blown away. I couldn't believe how creamy and tasty they really were! But, my biggest surprise was the flavor I ended up with, avocado lime.


Now I hear ya, this wasn't my first choice either. But, let me TELL YOU, this pop was by far my favorite. So, naturally I had to recreate it. My version is made with coconut milk, fresh lime, avocado and maple syrup making it low in sugar and high in super healthy fats. It also come in at a wimpy 160 calories per pop! If that isn't a summer dream I don't know what is!

Avocado Popsicles


1 ripe avocado

1 banana

1 zest of a lime

1/4 tip fresh lime juice

1 cup coconut milk from a can

Popsicle holders


Add the avocado, banana, zest, lime juice, maple syrup and coconut milk to a blender. Blend until smooth. About 1 minute.


Pour mixture into popsicle holders. Freeze for 6+ hours. When you're ready to eat them place one holder under water for about 15 seconds to loosen it and slide out the popsicle! Happy summer!
