Reluctant Housewife: Tray Dinner

In keeping with January's no fuss, no work recipes this is another favorite of mine! Laying a bunch of veggies and some protein on a pan with olive oil and salt and pepper and letting it cook itself. Who could want anything more?
I love this meal for its simplicity and deliciousness. This is sure to become a weekly dinner hit in your house. Trust me. It is in mine!

Tray Dinner
Veggies of choice: carrots, broccoli, potatoes, squash, whatever
Protein of choice: Boneless chicken, pork, steak, fish, again, whatever
Olive Oil
Salt and pepper to taste
Preheat your oven to 425
Line a sheet pan with tin foil. Dump chopped or if your veggies are small, un-chopped veggies onto the pan.
Add you protein to the pan.
Add a generous drizzle of olive oil. About 4 tbsp. Add salt and pepper to taste. Toss with your hands until everything is coated.
Bake in the oven for fifteen minutes. Check your meat with a fork and knife to see if it's cooked through. Chicken cooks quickly. If you protein is already cooked through go ahead and take it out and place it on a plate if the veggies need more time. Usually, 3-5 more minutes. Judge by how crispy you'd like them.
Place cooked veggies and protein on a plate and enjoy!
