Reluctant Housewife: Chicken Noodle Soup



In the middle of running from this party to that school function to your parents house and maintaining your sanity during the holidays it happens, that common cold can creep up on us. God forbid, not the flu!

I'm a big believer in soup. So, I'm bringing you a simple and healthy chicken noodle soup packed with cold fighting elements that will make your whole body and soul feel better!

Chicken Noodle Soup

2 tbsp. extra-virgin olive oil, divided

3-4 boneless skinless chicken tenders

Kosher salt

Freshly ground black pepper

1 large onion, chopped

3 large carrots, peeled and chopped

3 stalks celery, chopped

2 cloves garlic, minced

5 cups chicken or vegetable broth

2 cups water

Small sprig rosemary

1 bay leaf

1/2 package egg noodles

In a large pot over medium high heat, heat 1 tablespoon oil. When oil is hot, add onion, carrot, and celery. Season with salt and pepper andcook until beginning to soften, about 5 minutes. Stir in garlic and cook untilfragrant, 1 minute.

Chop into small cubes three to four boneless, raw, chicken tenders. Season chicken all over with salt and pepper and add to pot. Sauté for about five to eight minutes until cooked.

Pour in and add a bay leaf and sprig of rosemary. Bring to a steady simmer and let simmer 25-30 minutes. Season with salt and pepper.

Increase heat and bring mixture to boil, then add noodles. Cook until noodles are tender, about 7 minutes. Discard thyme stems and bay leaves. Enjoy!
