Paleo Chocolate Muffins


Okay, so it's wedding season and I've been trying to be really on it with my food for weeks now. But, taking away the goodness of life by taking away sugar is something I'm not doing too well with. I don't need a ton of it, but I kind of need dessert. So, I thought why not make something that tastes decadent but is secretly healthy so I can literally have my cake and eat it too?

Behold, the protein chocolate muffin! This muffin is soft, fluffy, melts in your mouth and it's paleo! It's the perfect sweet to eat when you're trying to be good-- or bad-- anytime really! My little tip: Add almond extract instead of vanilla for an added zing of flavor!

Paleo Chocolate Muffins

Makes 15 muffins

1 1/2 cups almond meal or flour

1/2 cup vanilla protein

3/4 cup unscented cocoa

1 tsp baking powder

1/4 tsp salt

1/4 cup pure maple syrup

1 cup unsweetened almond or coconut milk

2 eggs

1 tsp vanilla or almond extract

1 tbsp melted coconut oil

slivered almond

Preheat oven to 350. Combine all of your wet ingredients into one bowl and mix. Combine all of your dry ingredients in another bowl and mix. Slowly add your dry ingredients to your wet ingredients until thoroughly mixed. Do not over mix. Just make sure it's combines and smooth.

Place cupcake sleeves into a cupcake pan. With an ice cream scooper add two scoops of batter to each cupcake holder. Bake for about 20 minutes. Use a toothpick and poke one cupcake. If it comes out clean it's done.

I highly recommend eating these with almond milk. Yum!
