Reluctant Housewife: Avocado Pesto Pasta

Do you love pasta like this girl right here? Yeah, I can bet you do! It's one of my favorite things to eat. And, as much as I'd like to eat pasta and Italian food everyday for the rest of my life I just can't.

So, I found the alternative! No guilt, pure love, pasta without an agenda. Pasta free to do what pasta does best. Be delicious.

Avocado's are known for their creamy texture. You can add it in place of cream in so many recipe and most time you'll never know it was there! I'm in love with my new avocado pesto sauce and you will be too! This easy and super fast recipe will have you feeling like you splurged and give you more precious time with whoever you need to give it to most after a long day. Namely you.

Avocado Pesto Pasta

1 ripe pitted avocado

1/4 cup toasted pine nuts

1/4 cup grated parmesan

2 cups fresh basil

1/3 cup extra-virgin olive oil

1 large clove of garlic (optional)

Handful of her tomatoes

salt and pepper to taste

2 cups cooked brown rice and quinoa spaghetti pasta

Cook your pasta first in a pot of salted water until al dente. Save about a cup of the pasta water as needed for pesto sauce.

Blend in a mixer or blender all of the other ingredients listed. While blending add pasta water to your pesto if you need to thin the sauce.

Put your pasta in a bowl and pour your pesto over it. About a half cup or to your liking. Halve your cherry tomatoes and add on top. Add salt and pepper to taste and serve hot!
