Reluctant Housewife: Split Pea Soup
My mom and I are back at it again and we're making pea soup this time! This hearty, savory meal is perfect during those arctic blasts that the mid-west, south and east coast are having right now! It's easy and quick to make and will certainly be a welcome home to after a long cold day!

Pea Soup Recipe
1 bag of split peas
2 cups chopped carrots
1 chopped white onion
2 cloves chopped garlic
1 quart chicken broth
1 ham bone
3 cups chopped ham
1 tbsp olive oil
salt and pepper to taste
Begin by sautéing your onion in olive oil in a large soup pot on medium-low heat for about 5 minutes or until soft.
Add your carrots and sauté for another 5 minutes. Add your broth, ham bone and ham.
Add salt and pepper to taste and let your soup simmer covered on medium-low heat for a little over an hour. The longer you let it simmer, the more mushy and flavorful the soup will become.
At the half way point take a spatula and mush your peas by pressing them against the side of the pot. Add more water if you'd like a thinner consistency. Make sure to add more flavor like salt and pepper if you do begin to dilute the soup.
When the soup is to your liking after about an hour to an hour and a half serve immediately with a lovely french bread and enjoy!
