Reluctant Housewife: Blueberry Breakfast Cake
Who doesn't love cake for breakfast? I mean, is that really even worth asking? If you can have your cake for breakfast AND have it be healthy would you do it? Yes, of course you would.
Well, I have healthy cake for breakfast for you! It comes from one of my favorite websites www.toneitup.com from their latest Bikini Series nutrition plan-- which i HIGHLY recommend doing when you're not eating chocolate cake from the Reluctant Housewife nutrition plan. Listen, a girl has to have her priorities.

Blueberry Breakfast Cake
3/4 cup unsweetened almond milk
1 tsp vanilla extract
2 tbsp coconut oil (melted)
1/2 cup almond flour
1/4 cup protein powder
1/4 tsp salt
3/4/ cup blueberries
1 lemon zested
1/2 lemon juiced
Preheat your oven to 375 degrees
Combine your wet ingredients into one bowl. Combine you dry ingredients into a second bowl. Add you dry ingredients to you wet ingredients and mix until smooth. Add your blueberries and lemon juice last to your mixture.
Spray a glass baking dish with coconut oil . Pour mixture into a dish and put into the oven for about 45 minutes. If you smell it before the time is done check to see if a toothpick comes out clean from the cake. If it does, it's done!
