Reluctant Housewife: Sunshine Pasta Sauce
Your-ra, gon-na looooove my sunshine pasta sauce. When I eat this I feel right under the Tuscan sun thinking about my memoir, waiting for some yummy Italian med student to come by and ask if I'd like some company.
This is SO easy and so QUICK to make you won't believe me. Seriously. You won't. But, you should because I'm about to change your life and whisk you off to Italy after a long day of work when it's between this and a yucky TV dinner with freezer burn on it.

Sunshine Pasta Sauce
handful of heirloom tomatoes
2 tsp olive oil
1 large garlic clove
3 fettuccine nests or a handful of pasta to your liking
salt and pepper to taste
Boil four cups of water. Wash your tomatoes and cut an X at the bottom of each. This helps the skins to fall off once boiled. Once water is at a boil throw your tomatoes in for about a minute or until they float.
Throw your garlic, olive oil and salt and pepper into your blender. Once tomatoes are floating take a slotted spoon and throw them into your blender and puree until smooth. About thirty seconds to one minute.
Keep your water at a boil and place pasta in. Depending on your pasta type cook to al dente. Check the package to see what it recommends.
For fettuccine it will be done in about seven minutes. Strain and place into a bowl.
Pour your sauce on top, add parmesan if you'd like and Netflix and chill lady!
