Reluctant Housewife: Simple Orange Muffins
I have had a jonesing for some spring inspired muffins lately and citrus flavors never fail to entice! I would happily eat citrus and berry flavored baked goods well over anything chocolatey any day! Don't hate me, but it's true. There's something about the simplicity of nature and it's perfect goodness that makes my mouth water.
Okay, enough of this flowery stuff.
These SIMPLE-- no seriously SIMPLE muffins are so easy, so fast and so natural you'll wonder why you ever added sugar to anything after you've tried them. Made with almond flour, an orange, a little honey and some baking powder you'll have mouthwatering muffins in 20 minutes.

Simple Orange Muffins
1 orange (zest first before supreming or peeling)
2 tbsp honey
1 1/2 cups almond flour
1/2 tsp baking powder
Preheat your oven to 350 degrees.
Zest your orange and set aside. Peel or supreme your orange making sure there are no seeds left. Add orange to a blender and puree for about fifteen seconds.
in a separate bowl combine egg and honey and whisk until smooth.
Add your orange puree to your egg mixture and mix until smooth.
Add your almond flour and baking powder to orange mixture and mix until you have a batter consistency.
Take a spoon or an ice cream scoop and add one scoop to a cupcake or muffin tin. You can spray the tin with coconut oil or use cupcake liners for easy, on the go muffins.
Place in oven and bake for 18-20 minutes or until a toothpick comes out clean. Enjoy this super simple and super yummy muffin anytime!
