Reluctant Housewife: Easy Ezekiel French Toast

How doesn't love french toast? Who doesn't love toast right now? I mean, did we ever think TOAST of all things would take on a life like it has?
Well, I'm bringing toast back to basics with a slightly healthy twist. Ezekiel bread is a sprouted bread. It has tons of protein, no added sugar, four kinds of grains including legumes, that include wheat, millet, barley and spelt. I mean, it's practically a meal so I don't feel too bad putting jam or syrup on it. I'm getting my nutrients.

Ezekiel French Toast
2 slices Ezekiel bread
3 egg white or 2 whole eggs
1/4 cup almond milk
1/4 tsp vanilla extract
dash of cinnamon
1 tbsp coconut oil
syrup, jam or powdered sugar to top
Combine your eggs, extract, almond milk and cinnamon into a pie tin or shallow bowl and mix with a whisk or fork.
Drench each piece of toast on each side and let sit in mixture for about 15 seconds.
To a low-medium heat non-stick pan add your coconut oil and let melt. Once melted add you first piece of toast. Let toast on each side for about 15 seconds each and then place onto a plate.
Add syrup, jam or powdered sugar on top and eat up!
