Reluctant Housewife: Greek Lemon Turkey Soup with Mom


Are you guys ready for another episode with my mom? It's here! And, just like any mother daughter relationship we have our moments. Watch the fun as I teach her my new favorite Greek Lemon Turkey soup. This is super easy and SUPER delicious! Done in about twenty minutes you'll never think about going out for soup after your've tried this one. It's practically chop and ready!

Greek Lemon Turkey Soup

2 cartons of chicken broth (or turkey if you have it!)

1 handful of Italian parsley chopped

juice of two lemons

2 egg yolks

3 small slices of fresh cooked turkey chopped

2 cups cooked white rice

salt and pepper to taste

Bring your broth to a boil in a pot on the stove. Chop you turkey and parsley. Add your chopped turkey and rice to your broth and bring down to a simmer.

Juice two lemons into a separate small bowl. Add your two egg yolks to your lemons and stir until combined. It will be a pale yellow creamy color.

Stir your lemon/egg mixture into your broth for ten seconds. Add you parsley to your soup and let simmer for about 15 minutes.

Serve hot!
