Reluctant Housewife: Sunny Side Up Spinach Salad

Can't decide between breakfast, lunch or brunch? Well, now you don't have to! You're going to love my Sunny Side Up Salad with sautéed red potato on a bed of spinach and parmesan topped with a sunny side up egg, just for fun. Is this thing delicious? Uh, yes. Yes, it is. #brunchgoals

Reluctant Housewife

Sunny Side Up Salad

1 large red potato chopped

1 egg

two handfuls of spinach

olive oil to taste

1 clove garlic chopped

salt and pepper to taste

Lay you spinach down in a bowl and top with parmesan to taste. I added about two big pinches of grated parmesan for mine. Toss with about 1 tbsp olive oil and salt and pepper to taste.

Meanwhile, in a pan sauté your potato in a dash of olive oil on a low-medium heat until browned. Add chopped garlic last and sauté for about 1 minute. Pour onto spinach.

Fry your egg in the same pan just enough to make sure it stays runny in the yolk. About 2 minutes.

Place on top of salad and eat up!
