Reluctant Housewife: Carrot Cake Cookies

We all need something sweet sometimes. Maybe that a few times a week. Maybe that's a few times a day. To each their own. But, since we're still at the tail end of January and some of you might be trying to desperately to cling to a healthier eating new years resolution I give you these! HEALTHY CARROT CAKE COOKIES!

Ladies and my few gents who may be reading, this is your holy grail right now. This will get you through those horrible sugar cravings. After all, it's hard to go from the holidays into a lean, mean, no sugar eating machine.

Carrot Cake Cookies
2 1/4 cup old fashioned oats
1 cup whole wheat flour
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup unsweetened applesauce
1/2 cup pure maple syrup or honey
1 large egg
2 tsp vanilla extract
4 tbsp melted butter (cool before adding)
1 cup grated carrots
1 cup cubed apple
Preheat your oven to 350 degrees.
Melt your butter and let it cool for about 10 minutes.
In one bowl stir together your dry ingredients: flour, oats, cinnamon, salt, baking soda.
In a second bowl stir together your wet ingredients: applesauce, maple syrup, egg, vanilla extract.
In thirds, add your dry ingredients to your wet ingredients. Once combined, stir in your carrot and apple until smooth.
Line a baking sheet with parchment paper. Using an ice cream scoop scoop cookie batter onto cookie sheet. These cookies will not spread on their own so push them down to make them flatter. Place abut 1 inch apart.
Bake for 14-15 minutes. Cool on a cookie sheet and then enjoy for breakfast or a snack!
