Reluctant Housewife: Meatloaf with Mom

What's better than getting cozy on a cold winters day under a plush blanket by a fire with a big slab of meatloaf to keep you warm? Nothing. Nothing is more Americana than my mom's meatloaf and I've got it special just for you!

Your, Reluctant Housewife

Mom's Meatloaf

1 tbsp Olive Oil

1/2 medium, yellow onion chopped

1 garlic clove minced

1 medium red pepper chopped

2 tbsp flat leafed parsley chopped

2 tsp thyme

2 pounds lean ground beef

2 large eggs beaten

3/4 cup dry bread crumbs

1 cup BBQ sauce

1 tbsp Worcestershire sauce

2 tsp kosher salt

1 tsp ground pepper

Preheat your oven to 350 degrees. Sauté your onion and garlic on low-medium heat until tender. About three minutes. Add your red pepper and sauté until tender. Stir in your parsley and thyme and cook for another two minutes. Remove pan from heat and let cool.

In a large bowl combine your meat, eggs, bread crumbs, 1/2 cup of BBQ sauce Worcestershire sauce, salt, pepper and the cooled veggie's. Moosh (combine) together until blended.

Pour into a loaf pan. Coat the meat with the remaining 1/2 cup of BBQ sauce. Bake for 1 1/2 hours until meat is firm. Let it rest for about five minutes out of the oven and serve with a nice red wine. Or, if you're eating it with your mom, a Chardonnay. Obvi.
