Reluctant Housewife: Slow Cooker Chicken Noodle Soup
Updated: Mar 21, 2019
It's slow cooker season and I thought I'd start it off with one of my favorite soups, chicken noodle! The set it and forget it mantra has never been stronger with this recipe. Dump all of your ingredients in the pot, set it on low for 6-7 hours and come home to dinner. Please. Done.

Slow Cooker Chicken Noodle Soup
6 chicken tenders
2 Bay leaves
3 Carrots, chopped
4 stalks Celery
2 cloves Garlic
2 sprigs Rosemary, dried
3/4 tsp Thyme, dried
1/2 Yellow onion, chopped
2 quarts Chicken broth, low-sodium
1 1/2 cups Wide quinoa or egg noodles
Salt and freshly ground black pepper to taste
3 tbsp Olive Oil
Chop your celery, carrots and onion. Throw into pot. Add your rosemary and thyme, salt and pepper, olive oil, bay leaves, garlic and chicken broth into the pot.
Basically add everything into your pot.
Set it on low for 6 1/2 hours. Go about your day. Come home. Take only the chicken out and chop into bite size pieces and then place back into the soup. Add your noodles to your pot and set on low for another 1/2 hour.
Behold, dinner! Eat up!
