Reluctant Housewife: Brownie Cookies
Updated: Mar 21, 2019
What's better than brownies? How about brownie COOKIES?! Oh, wow. I had so much fun making these fluffy, melt in your mouth cookies with my good friend Alyssa Reeves.
Watch us figure out how to make these delightful treats here in the latest episode of Reluctant Housewife and grab the recipe below!
Brownie Cookie Recipe
6oz dark chocolate or semi sweet (you choose)
3 tbsp unsalted butter
1/4 cup all-purpose flour
1/4 tsp baking powder
2 large eggs
1/2 cup brown sugar
*So, Alyssa and I may have gotten the measurements wrong in the video, but you can bet the ingredients are correct here!
Melt your chocolate in a double boiler or a glass bowl inside of a pot with 2-3 inches of water. Slowly stir your chocolate until it melted. Add your butter and stir until melted. Take your bowl off the pot and let it come to room temperature, or place it in the fridge for about 10 minutes.
In a small bowl mix together your eggs and sugar. Add that to your chocolate and mix together. Then add your flour and baking powder until combined.
Let it chill in your fridge for about 20-30 minutes until your batter is slightly thickened. Add some liqueur like we did and wait it out in style.
Preheat your oven at 350 degrees. Line a baking sheet with parchment paper.
Use a medium ice cream scooper and scoop cookies onto your pan. Allow enough room for them to expand. About 2-3 inches apart. Your batter will be slightly thin.
Bake for about 10 minutes until they are cooked on the edges but soft in the middle. Take out and let cool for 5 minutes and then eat your heart out!
