Reluctant Housewife: Pumpkin Protein Muffins

I have discovered the most delicious, fluffy and moist pumpkin muffins ever-- AND, they're HEALTHY! WHAT? How is this even possible you ask? It is and they're amazing. Thanks to the girls at www.toneitup.com for coming up with this incredible recipe for their 31 Day Challenge. #tiu I'm all over it!

Pumpkin Protein Muffins
1 1/2 cups rolled oats
1 cup pumpkin puree
1/4 cup applesauce
1 tbs vanilla extract
2 tbsp coconut oil (melted)
1/4 cup alone milk
1/4 cup maple syrup
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Preheat your oven to 350 degrees. Line a muffin pan for 11 muffins. Yeah, I know. This recipe only yields 11 muffins when I make it. I'd add a touch more almond milk to make 12, or just be happy with an odd number. ;)
Add one very ripe banana, pumpkin puree and almond milk to a bowl and mash up until smooth. Add the remaining ingredients and blend together with a wooden spoon.
Pour entire contents into a blender or food processor. Blend until smooth.
Scoop batter into muffin slots. About 1/2 to 3/4 way full. Bake for about 25-30 minutes. Check to make sure your muffins are cooked through with a toothpick. They're done when the toothpick comes out clean.
