Reluctant Housewife: Ice Cream Cake

What's better than cake?
Ice cream cake.
Yup, and I've got it for ya! While it's still warm outside what better time for an end of summer beginning of fall ice cream cake? It was my boyfriend's birthday this week and we both prefer ice cream cake to regular cake. So here it is!

Ice Cream Cake
2 different flavors of ice cream. At least 15 QT.
1 cake mix from a box, vanilla or chocolate or whatever you'd like
ice cream scooper
1 small carton heavy whipping cream
3 tbsp confectioners sugar
1/4 tsp vanilla extract
Bake one layer of your cake. You'll only need one layer for this recipe, but if you wanna get crazy with your layers, go for it. After baking let your cake cool completely. Once cooled wrap tightly in seran wrap and place in the freezer for at least an hour.
Take additional cake layer pans, I like round, and place a piece of seran wrap down. Fill with ice cream in each. Each layer should be a different flavor. Stick in freezer for an hour.
While everything is freezing make your whip cream frosting.
Whip Cream Frosting:
Whip on high your heavy whipping cream. About 10-15 minutes or until stiff peaks and ripples appear that can stand on their own. Add sugar and extract and mix until blended. Place frosting in fridge until ready to frost.
When ready to assemble your cake pull all of your layers out and your frosting. Put your cake layer down first. Then pull your seran wrap and lift your ice cream layers out of their pans and place on top of each other.
Frost your cake, add sprinkles to the top and quickly put back into freezer to harden. Serve when ready! Happy birthday!
