Reluctant Housewife: Butternut Squash and Kale Salad

Just because we're inching our way into the holidays doesn't mean you have to sacrifice everything and dive straight in the the poundcake. I mean, essentially it doesn't.
In the spirit of staying healthy but still bringing in your favorite fall flavors I give you this. A DELICIOUS butternut squash and kale salad.
I eat that entire bowl in one sitting guys. It was that good.

Butternut Squash and Kale Salad
1 cup chopped butternut squash
2-3 cups fresh kale
3 tbsp chopped almonds
3 tbsp dried cranberry
As much olive oil as needed to coat your kale and your butternut squash
Salt and pepper to taste
Chop your butternut squash into bite size pieces. Place into bowl and douce with olive oil and salt and pepper to taste. Place on tin foil and bake at 350 degrees for about 15 minutes or until soft and golden brown.
Chop your kale into bite size pieces and place in a large bowl. Add cranberries and almonds. Add salt and pepper to taste and toss. Let sit so that the olive oil can soften the kale while your squash is cooking.
Take your squash out of the oven and toss into salad. Done! Yum!
