Reluctant Housewife: Coconut Flour Pancakes

Okay, so we're all trying to be fit for the summer and that simply means no Sunday morning pancakes that we all know and love. But-- it does mean COCONUT FLOUR PANCAKES that are so damn good you may just give up your old pancakes for GOOD!

Coconut Flour Pancakes
1/4 cup coconut flour
1/4 tsp baking powder
1 tbsp granulated sugar or agave
1/4 tsp sea salt
3 tbsp coconut oil (liquid)
1/4 cup coconut milk (not the super thick kind for soup)
Mix your dry ingredients together in one bowl until smooth. Set aside. Mix you wet ingredients in another bowl and set aside. Combine in three equal parts your wet ingredients to you dry ingredients mixing each time until smooth.
Heat a skillet on low heat with 1 tbsp butter or coconut oil. Make sure to only heat your coconut oil for about 10 seconds. It will heat up very quickly and has a high burn tolerance. Add 1/4 cup batter to pan. Cook on each side until golden on the edges. You will know your pancake is ready to be flipped when you see the edges become whiter and more solid and little bubbles come through the middle of the pancake.
Place on a plate and add pureed strawberries, regular syrup, berries or powdered sugar. Go crazy!
