Reluctant Housewife: Strawberry Pie

Strawberry Pie Recipe

Filling:

1 cup chopped strawberries

fresh strawberries

1 cup sugar

3 tablespoons cornstarch

1/2 cup water

Crust:

1 1/2 cups all purpose flour

1/2 teaspoon salt

1/4 cup vegetable shortening

1/4 cup butter

4-5 tablespoons of ice water

Whip Cream:

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 tablespoon granulated or confectioners sugar

To make whip cream, whip cream on high in a large bowl until stiff peaks are just about to form. About 10-15 minutes. Beat in vanilla and sugar until peaks form.

To make your crust, butter a 9-inch pie tin or glass and set aside. In a large bowl, combine the flour, and salt with a whisk. Cut in the shortening and butter with a pastry blender or two forks until the mixture looks like a corse meal. Gradually add enough water a little at a time to the mixture while mixing with a wooden spoon until it becomes a ball. Use your hands if you need to combine.

Place the ball of dough onto a long floured piece of of parchment paper or plastic wrap. Flour the top of the dough, place the other half of the paper over the dough and begin to roll until it has become a big enough circle to fit over the sides of your pie dish.

Carefully lift the paper from the top of the dough and place pie dish on top. Flip over and lift the remaining paper off. Sink your pie crust into the dish to fit and create a design for your crust if you'd like. Cover with plastic wrap and place in the freezer for at least 30 minutes. Heat your oven to 450 degrees. Bake your pie crust for around 8-10 minutes until golden brown.

To make your filling, in a small bowl chop or crush enough strawberries to equal 1 cup. In a saucepan add your cornstarch, water, 1 cup of strawberries and sugar and bring to a boil. Simmer for about 30 minutes. Take off the heat and set on counter to cool. Place in freezer to help gel as well for about 20 minutes.

Place whole or halved fresh strawberries in pie crust. Pour filling on top of strawberries. Add fresh whip cream or eat alone!
