Reluctant Housewife: Cauliflower Rice Pizza
Do you love pizza but hates what it does to your ass? Yeah, me too. I thought I'd give it a go and try making the newest craze, the cauliflower rice pizza crust! And, let me tell you-- this is pretty incredible! Now you can have your pizza and eat it too! No guilt required.

Cauliflower Rice Pizza
1-3 people pizza:
2 pounds cauliflower rice (get it from Trader Joes already ready if you can)
1/3 cup soft goat cheese with herbs and garlic
dried oregano to tast
salt and pepper to taste
4 small tomatoes
3 cups mozzarella cheese
1 cup marinara sauce
fresh basil chopped
fresh thyme chopped
Place your rice, egg and cheese into bowl and mix with your hands until combined. Lay down on an oiled piece of tinfoil on a pan or a piece of parchment paper. I'm really going to say go for the parchment paper here.
Bake at 400 degrees for about 35-40 minutes. Coat in marinara sauce. Cover in cheese, place your tomatoes, basil and thyme down. Add salt and pepper to taste and return to oven for about 5-10 minutes or until the cheese is melted.
Bring out of the oven and slice. It's pizza time!
