Happy Cinco de Mayo! This is not just any holiday here in L.A. This city turns up with some of the best Mexican restaurants outside of actual Mexico! If you're not lucky enough to be here on this special of days or if you are here and feel like beating the rush of crazy Angeleno's you can bring the party to you with this mouth watering pineapple pork belly quesadilla and tropical guacamole!

Pineapple Pork Belly Quesadilla Recipe
1 small pork belly (fully cooked)
tortillas
2 avocado's
2 limes
cilantro to taste
two small tomatoes
1/4 pineapple
1/2 red onion
1/2 cup mozzarella cheese
BBQ sauce
salt and pepper to taste
1 tsp olive or canola oil
Guacamole:
Dice your pineapple, tomato, avocado and red onion and throw into your bowl. Squeeze a half of a lime in and add salt and pepper to taste. Mash together and set aside.
Quesadilla:
Brown each side of your fully cooked pork belly until it's browned. Take off heat and dice. Place one tortilla on a greased skillet with olive or canola oil at medium heat. Place mozzarella down on it first, then diced onion, pineapple and pork belly. Cover with more mozzarella and place another tortilla on top. Cook until golden brown on one side and then flip.
Once cooked add guacamole and a dash of BBQ sauce on top. Crack a Corona and enjoy!
