Reluctant Housewife: Lemon Basil Grilled Cheese Sandwich
Well, the boyfriend and I have become connoisseur's of the grilled cheese lately and that prompted me to come up with a fun new take on it-- the lemon basil grilled cheese. It will make you feel like you're having something straight out of the heart of Tuscany. Or, a refreshing afternoon by the sea. Insert dreamy grilled cheese experience here.

Lemon Basil Grilled Cheese Sandwich
1/2 cup shredded mozzarella cheese
2 slices sourdough bread
1 tsp olive oil
5 large basil leaves
zest of one lemon
juice of half a lemon
Zest your lemon and cut in half. Rough cut your basil.
Spread your lemon zest on top of one slice of bread. Place cheese on top of that. Cut your lemon in half and squeeze the juice from it over your cheese. Place your basil on top.
Coat your pan with olive oil and set to a low-medium heat. Place your slice with toppings with the bread side down to cook. After about 3-5 minutes check to see that your cheese is melting and that the bread is starting to toast.
Place your second slice of bread on top and carefully flip your sandwich over to toast the other side for about 3-5 minutes. Add a touch more olive oil if need be.
Place on a plate and devour!
