Reluctant Housewife: Lemon Cilantro Mahi Mahi

Trying to eat a little more healthy these days? Me too. That's why I thought why not get all Paleo on it and make some lemon cilantro mahi mani to kick start things! This easy 7 minutes meal will make you feel like you're lunching with the girls without the guilt.

Lemon Cilantro Mahi Mahi

1/4 cup chopped fresh cilantro

2 medium lemons

1 tsp olive oil

1 mahi mahi steak

4 small cloves of garlic

salt and pepper to taste

1 tbsp feta cheese

*This is a very quick fish to make so any sides that you'd like to add I'd suggest making them ahead of time. I whipped up a very easy salad to place my mahi mani over.

Take two handfuls of lettuce mixed in a bowl with 1 tbsp olive oil, salt and pepper to taste and a tbsp of feta cheese. Set aside on your plate. Set you oven to 400 degrees to heat up.

Zest one lemon, chop your garlic and chop 1/4 cup cilantro. Place in a small bowl. Cut one lemon in half and set aside.

Cut your mahi mahi into small steaks. Add1 tsp of olive oil in a pan on medium heat. Sear your steaks about 1-2 minutes on each side. Be sure not to over cook.

Place steaks on tinfoil. Add your cilantro mix on top. Put into a 400 degree oven and cook for 3-5 minutes depending on the thickness of your steaks.

Place steaks on top of salad, pour yourself a nice glass of Chardonnay and enjoy!
