Reluctant Housewife: Valentines Day Pork with Chocolate Sauce

Ah, Valentines Day. Looking for something sweet and savory for your someone sweet? Well, we've got it! What better way to spend Valentines Day than with someone you love? Be it another person or yourself we've got a super yummy pork loin with actual chocolate sauce for ya!

Valentines Day Pork Loin with Chocolate Sauce

1 french cut pork loin

1 tbsp olive oil

course sea salt to taste

1 tbsp cracked black pepper

1 tbsp minced shallot

1/4 cup port wine

1 tbsp balsamic vinegar

1 tsp minced fresh rosemary

1/2 (1 ounce) square bittersweet chocolate chopped

Coat pork on either side with olive oil and sprinkle sea salt and cracked pepper. Heat 1 tbsp of olive oil in a pan until it begins to smoke and cook you pork, about 4 minutes on each side. Remove the pork and set somewhere to stay warm.

Stir in the minced shallot and cook until translucent, about 1 minute. Pour in port and balsalmic vinergar. Simmer until the port reduces to the consistency of syrup, about 2 to 3 minutes. Add the beef stock and rosemary and return to a simmer. Once the sauce has begun to simmer, wisk in the chocolate until it melts and slightly thickens the sauce. Pour over steaks and prepare to amaze your sweetheart!
