Reluctant Housewife: White Chocolate Cranberry Cookies
I first had this cookie on set and though I'm not a huge white chocolate fan this cookie blew me away! Move over white chocolate macadamia nut, there's a new cookie in town and it's a rebel!

White Chocolate Cranberry Cookie Recipe
1 cup brown butter (room temperature)
1/2 cup granulated sugar
1 cup brown sugar
1/2 teaspoon salt
2 teaspoons vanilla
1 teaspoon baking soda
2 1/4 cups all purpose flour
1 1/2 cup white chocolate pieces
1 cup dried cranberries
Preheat your oven to 350 degrees.
In a mixing bowl cream the butter and then slowly add your sugars. Then add eggs, salt, and vanilla and mix well. Add your baking soda and mix again. Add your flour into your butter mixture in equal parts at each time. Mix just until combined. Rough chop 4 squares of Ghirardelli white chocolate. Stir in white chocolate pieces, sliced almonds and cranberries. Place 2 tbsp scoops of dough onto parchment paper on a baking sheet 2 inches apart. Bake 7-8 minutes or until you can smell the cookies. Look for the tops of your cookies to still be a little mushy to ensure chewy cookies when they cool. Let them cool on baking sheet a few minutes before transferring to cooling racks to cool completely.
