Reluctant Housewife: Eggnog Cake


So, after creating a killing your homemade eggnog you thought to yourself, "Hey, what could be better than eggnog than an eggnog CAKE?" And, so you came rushing back and asked me, "PLEASE, can you show me how to make my eggnog into a cake?" To which I said, "Of course darling."

  • 1 1/4 cup All Purpose Flour

  • 1/2 cup Cake Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Salt

  • 3/4 cup Eggnog

  • 2 tsp Vanilla

  • 1/2 cup Unsalted Butter, softened

  • 1 1/2 cup Sugar

  • 2 Eggs

Bring all dry ingredients: flour, cake flour, baking powder and salt into one bowl and wisk together. Set aside. In a seperate bowl mix butter at room temperature until fluffy. Add eggs, vanilla extract and sugar to butter until blended. Pour 1/3 of the dry mixure into your wet mixure bowl and 1/3 of your eggnog into wet mixure bowl. Blend until smooth. Do the same thing two more times. Do not over blend.

Grease your cake tin and pour your mixure into it. Set in oven at 350 degrees for 30 minutes or until a toothpick comes out clean. Drizzle some Brandy or Jack Daniels on top of your cake once it's cool for about 2 minutes. Let your cake rest and then serve!
